10 Grain Muffins My Way

So this was my latest excursion into the kitchen. I found a bag of Bobs Red Mill 10 Grain Hot Cereal with a recipe for muffins and I changed it to what I had on hand so here it is..

first add 1cup cereal into 1 cup of milk with 1/4 sour cream (I mixed milk and SC well before adding cereal) and let it soak for 10 minutes while you prepare the rest of the ingredients.

In large mixing bowl cream together

1/3 cup softened butter -unsalted

1/2 cup sugar-heaping
then add 1 large egg and mix well.

Add in
1 cup flour

1/2 teaspoon sea salt ( I added the salt to the milk/cereal mixture)
1 teaspoon baking soda
1 teaspoon baking powder
and the milk/cereal mixture
2/3 cup chopped nuts- I used  walnuts
1/8 teaspoon fresh grated nutmeg
(My first batch did not get nuts, nutmeg or frosting)


Mix well and scoop into 12 cup muffin pan. I use a #3 Ice Cream scoop.

Bake at 375 for 18 minutes +/-. You're a cook, keep and eye on 'em. When they look done, take them out.

Then I added frosting to the second batch it was so good I ate the frosting by itself.






Using handheld mixer cream 1 - 8 oz pkg softened  Cream Cheese with 1 1/2 cups powdered sugar and 1/8 teaspoon almond extract until smooth and creamy. Frost muffins and enjoy... Personally I found this frosting too good for these muffins. They are a great breakfast muffin (all the grains and stuff) but I'm saving that frosting for something special. They didn't quite "go" together. But they are very good muffins and easy to make.
