Frosted Raisin Squares
Oh these smell so good while they're baking. Like a huge Oatmeal Raisin Cookie. It's a pretty simple recipe except for simmering the raisins and waiting for the liquid to cool, then spreading it in the pan (it's a little hard to do. I used my finger to push it to the edge) I do want to say... this is NOT my recipe. I found this on the Grandparents site and of course modified it with a little extra spice. Sorry. I meant to put that on at the beginning. Don't want to plagiarizer anybody's work, so the original recipe it at grandparents.com
INGREDIENTS:
1 cup of raisins
1 1/2 cup water
2 Tablespoons Butter
2 Cups Flour
1 Cup Sugar
1 teaspoon Baking Soda
1 teaspoon Baking Powder
1 1/4 teaspoon Cinnamon
1/2 teaspoon Salt
3/4 teaspoon Nutmeg
3/4 Cup Chopped Walnuts
DIRECTIONS
1. Preheat oven to 350 degrees. Grease and flour a 9x12 baking pan.
2. In small saucepan, simmer 1 cup raisins with 1 1/2 cup water and 2 T butter until only 1 cup of liquid remains. Remove from heat. Do NOT drain!
3. In Medium bowl sift flour, sugar, baking soda, baking powder, cinnamon, salt, and nutmeg. Stir in chopped walnuts. Add cooled raisin/water mixture, stir to combine. Spread as best you can in pan, you will have to work with it as it will be like a wet cookie dough..
4. Bake 15 - 20 minutes or until top is golden brown. Remove from oven and cool
FROSTING:
1 cup Confections Sugar
1 Tablespoon butter melted then cooled
1 Tablespoon water
1 Tablespoon Orange Juice
1 Tablespoon Lemon Juice
1 Tablespoon Orange Zest
1 Tablespoon lemon Zest
Combined All ingredients and mix well with a whisk (no lumps) then drizzle over cooled cake while still in pan, then cut into squares or triangles or ??? They are soooo yummy.
